I was lucky to do just that, and can’t wait to share the juicy details of this fine dining experience.
It tops the charts for dining in Detroit, so much that it felt like we teleported to the home of the acclaimed visiting chef himself, Chef Dave Pasternack. His presence made the experience absolutely priceless in that it felt like an intimate dinner date with The Fish Whisperer himself.
Rare Exclusivity You Can Taste
It’s not every day that we can sink our teeth into The Big Apple’s finest dining on offer right here in the heart of the D. Did someone say Caviar? On an oyster? Yes, please.

This very exclusive evening of seafood mastery felt otherworldly. We learned and tasted exactly why The New York Times calls Chef Dave Pasternack, “The Fish Whisperer.” In fact, he is also credited with introducing “crudo” to American cuisine. Crudo is Italian for “raw,” and Chef Pasternack describes crudo as Italian sashimi.
James Beard Award–winning Chef Pasternack brought every last bit of his renowned culinary expertise to the newly refreshed Detroit Foundation Hotel for what became one undeniably unforgettable fine dining extravaganza.
Supreme Patio Dreams Delivered
The evening started in true Detroit summer fashion on the patio with plates of proper, classic, newspaper-wrapped Stuzzichini, aka Italian appetizers often served with drinks during aperitivo.
Aperitivo is a lovely Italian tradition, and I wish we had more of it here! This treat is a pre-dinner social ritual involving drinks and light bites to stimulate the appetite. And yes, it did just that!

Chef Dave Pasternack together with Chef Rece Hogerheide mingled with guests as they shared stories of palatable passion for seafood and genuine wholehearted hospitality.

From the patio, we made our way into the dreamy, most elegant Le Grand Salon—just off The Apparatus Room—for a delightful, multi-course marvel of a dinner paired with wines, the finest booze-free craft cocktails called Curious Elixirs, and Saratoga Still and Sparkling Waters.
The magnifique menu did not disappoint, spotlighting the freshest seafood, inspired by Chef Pasternack’s signature approach. With each unique dish served, the Chef would share an intimate story about what we were eating, where it came from, and how he came to prepare it as he does now.
He shared his truly heartfelt feelings about al dente, too. "Al dente" is an Italian phrase that means "to the tooth," describing the ideal texture for pasta when cooked - firm, not mushy.

It felt so exceptionally special to be sitting at The Table, listening to stories straight from James Beard Award-winning Chef Dave Pasternack himself.

As the Detroit Foundation Hotel continues to announce new dates and special guest chefs for their Guest Chef Dinner Series, I cannot recommend more highly grabbing yourself a Seat at the Table. Prepare to be remarkably pleased upon enjoying such an intimate dining experience.
